Avocado season is here!

It is very easy to buy Guacamole from the shop, but if you think about how perishable Avocados are, there are quite a few preservatives added to the shop bought Guacamole’s to keep them on the shelf.

Nothing is ever going to taste as good as the one you make yourself.

Here is my version and I like to keep it very simple as all the flavours marry so well together, I never mess around with it, a big thing for a chef!

Gaucamole and wraps

Kemi’s Gaucamole

3 Ripe Avocados, mashed ( I like to keep it on the chunky side)

3 Tomatoes, finely diced

Juice 1/2Lime

1/2 Bunch Coriander, roughly chopped

2 Garlic Cloves, crushed

2 Tablespoons of Olive Oil

Sea salt to taste

Mix all of the ingredients together in a bowl and serve. Of course we all know how to serve Gaucamole with corn chips, but have you ever thought of using it as a filling for lettuce wraps?

Find some good sturdy lettuce leaves, Cos are in season here right now and add a dollop of Gauc! Feel free to add anything else raw and crunchy to your wraps,
Beetroot, Carrot, Sprouts? And if like me you like a little fire in your food, some freshly chopped Chilli is rarely a mistake!

Children do not like greens?

A green smoothie fan who could not get enough!

My wonderful friend Sue and her two beautiful  children Rohnan and Sean came to stay with us for 4 days and my goodness do they love green smoothies! I have to say though Sean was a smoothie monster. Every morning he would say to me “Been moothie Kemi”, I could not make it quick enough for him. One morning he licked all the leftovers from the other 3 children’s cups and the day after, finished his and then insisted that he also have his mums (pictured).

We seem to believe that children will not eat greens, green smoothies inspire anyone to have their greens and love them.

I bought our first box of mangos this season yesterday and decided to freeze a whole one as an experiment, when I returned two hours later, I prepared this smoothie.

Frozen mangos are heaven!

For a great afternoon tea when mangos are at their cheapest I suggest giving a frozen mango to each child and let them at it!

Wow!

I nearly screamed the house down with excitement yesterday as I was throwing some kitchen scraps on the compost. Our baby Mulberry tree (3 years old) has Mulberries on  it, they are big, fat and our first ever Mulberry harvest, hooray for Melbourne rain!

Ella my daughter came running and see what I was so excited about, I actually suggested to her that we call them Mulcherries as they are as big as cherries, we both found that very funny.

I then disappeared into the kitchen and when I came out Ella had gone very quiet (not always a good thing) as I looked I saw that she had not wanted to wait for me to get a bowl and was balancing on the side of the compost already harvesting our Mulcherries!

Later when her brother Benji came home she took him straight to the tree and they spent a good half hour harvesting and hanging out on top of the compost. When I told him what  Ella and I were naming the fruit he topped us with “They are so big we should call them Mulbricots!”

So we are very chuffed with our Mulbricots and we very aware that we need to visit the tree everyday before the birds get any whiff of our burgeoning harvest!
