Banana Balls

 

The recipe for these balls had been going around in my head for a while, until I finally got them out of my head and into the children’s mouths!

So over the weekend Ella and I made these a second time (the first time was with Ella and Benji, and Benji helped finalise the recipe).

With so many schools having nut free policies, I wanted to create some treats that would be energy giving for packed lunches without containing nuts. Of course these are also wonderful for adults!

BANANA BALLS

1 Cup Dried Bananas  (soaked for at least 2 hours and water discarded)

1 Cup Dessicated/shredded Coconut  (plus a little extra for coating balls)

1/2  Teaspoon Cinnamon pdr

3 drops Vanilla extract (lets leave the ‘Vanilla essence’ back in the 60′s where it belongs!)

Place all the ingredients in a food processor until the mixture forms into a ball. As there are many forms of dried bananas you may need to add more coconut until it forms.

Roll into small balls and coat in remaining coconut.

These also taste great straight form the freezer.

    Sounds delicious – i make some similar – but with those daggy over ripe bananas and dried dates. mmmmmmmm
